225g S.R Flour
lots of grated cheese of choice
100g sourdough starter
salt and white pepper taste
Cheese for topping
Serves: 10x6cm scones
Preheat oven to 180C fan.
Mix the salt and pepper into the flour
Rub the butter or margarine into the flour until a fine crumb.
Add the grated cheese and stir in. Please add as much as you like this batch has a pre grated mix of cheddar and mozzarella.
Weigh the starter into a small bowl, stir in the egg and yoghurt.
Add to the flour and cheese mix, form a dough. Add a little cold water if needed. The dough needs to be soft but not sticky.
Put the dough on the counter, knead briefly then pat out to desired thickness, no need to use a rolling pin. The dough was about 2cm thick for this batch.
Prepare the baking tray by sprinkling flour across it.
Cut out the scones reworking the dough until all cut.
Top the scones with more cheese, this batch has parmesan.
Leave to rest for about 10 mins the scones will start to rise.
Bake for 20 mins.
Leave to cool for as long as you can.
