This is the marination of chicken in a mixture of egg white, cornflour, and rice wine or sherry. The meat once cooked has a soft velvety texture and is best used for Chinese dishes. 454g chicken breast cut into cubes. 1 large egg white 15ml rice wine or dry sherry 5ml salt 15ml cornflour. Whisk together egg white, wine salt and cornflour, add chicken and mix well. Marinate for 3-24hrs.
