Place the egg yolks and sugar in a bowl.

These are then whisked together.
The yolks and sugar will thicken and lighten in colour as the air is incorporated.
The process is complete when you are able write the first letter of your name with the mix as it falls from the end of the whisk, the letter will remain proud of the mix. If it disappears, keep whisking.
