Peel the outer papery skin from a clove of garlic.
Slice in half through the root.
Slice across the half clove forming thin cuts through the clove, but not cutting through the root.
Make one or two slices across the line of the first cut towards the root. This will ensure a very small dice.
Follow this by slicing down across the line of the previous cuts. Continuing until the root is reach and discard the root.
To achieve a smaller piece size, go over the small pieces with the knife.
