It is important to melt chocolate using a gentle heat, otherwise the chocolate will burn. Break the chocolate into small pieces and place in a bowl over a pan of hot water. The steam from the water will slowly melt the chocolate. Do not stir until chocolate has almost melted. Microwaves are useful for melting chocolate, however care must be taken as it is easy to over heat and burn the chocolate. Defost programmes are the best as they use the lowest power. Individual microwaves will vary, so experiment with each one to find the best programme.
